Lemon Bar w/ Almond Crumble Crust ~ Gluten-Free

I know a lot of people might tell you to avoid sugar at all costs, but I’m of the belief that a little bit of sugar can make life (and desserts) just the right touch of sweet. Sometimes you just need to nourish yourself with the sweetness of life, and these lemon bars are the perfect combination of healthy and sweet! With a high protein, gluten-free crust, you can indulge and still feel great afterward! **Healthy Tip: I like to meditate before indulging in sweets so my stress level is lower and my food tastes better. My pleasure in cooking desserts translates to pleasure in slow eating when I am relaxed and having fun with family and friends. I eat less because my experience is more satisfying.

Ingredients

  • 1/2 c – butter
  • 3/4 c – gluten-free flour
  • 1/4 c – almond meal
  • 1/4 cup – organic powdered sugar
  • 1 cup – organic cane sugar
  • 1/2 tsp – baking powder
  • lemons for juice  & grate the skin
  • two or three eggs
  • pinch of salt
  • 8 inch glass pan

To prepare:

  1. To make these lemon bars you need to smile the entire time 😉
  2. Preheat oven to 350.
  3. Melt a small stick of butter and blend in powdered sugar, gluten-free flour and almond meal.
  4. Press this mixture into 8-inch pan and cook for about 15 minutes until lightly brown.
  5. Mix the other ingredients until you smell the almonds cooking.
  6. Melt two more tablespoons of butter and set aside to cool.
  7. In a Vitamix blender add in cane sugar, 2 tsp of grated lemon peel, 2 tbs of lemon juice, baking powder, a pinch of salt, 2-3 eggs and add in the melted butter.
  8. Wait until the crust is finished cooking and pull the pan out of the oven and place on the stove.
  9. Blend the ingredients in the Vitamix on high for three minutes until this mixture gets frothy and pour over the crust.
  10. Put back in the oven to bake for another 25 minutes, until you can press the top and not leave an indentation.
  11. Sprinkle with a little powdered sugar.
  12. Cut into serving size (I like to cut into rows 4 by 4) and store covered in the refrigerator until you are ready to serve.
  13. Enjoy! (even better with a cup of green and ginger tea!)
